Sichuan Red Oil 3 cups canola oil 1 bunch scallions, white parts only, rough chopped 5 pods star anise 4 bay leaves 2 sticks cassia bark, or cinnamon 1 pod black cardamom, cracked 6 Tbsp Sichuan peppercorn 1 ½ cups Sichuan chile flakes salt to taste 1. Combine all ingredients except chile flakes and salt in a heavy saucepan. 2. Cook at 225-250° for 30 minutes. 3. Strain over chile flakes into heatproof container. Allow to rest at least 12 hours. Season to taste with salt.
