has left the premises
The Farewell is as important as the greeting.
It is your last chance to influence your
guest’s decision on whether or not he will return.
• Continue service until guests prepare to leave.
• Continue to pour water or other beverages.
• Assist guests leaving/ Bid Farewell
• Assist guest with chair and/or belongings, and lead guest to entrance
• Thank guests for dining with us
• Invite guests to come back again, sincerely, and with a smile.
• Return to table, inspect immediately.
Clear and reset if required.
• Check for guest items, pens, wallets, bag etc.
• Clear all the soiled dishes, linen, and cutleries
• Wipe table and reset table setting if required.
CLOSING DUTIES
Waitstaff should never go off-duty while guests are still at their stations.
